This spring we have again hatched eggs. There is nothing cuter than these day-old chicks.

Hi sweet people. Don’t worry I haven’t forgot you, I can’t :*
I hope you had a lovely Easter, I had but the time after Easter has really been intense.

I have in the past week been totally consumed of a assignment, which is going to be a part of my oral examination this summer. To be honest, I’m not satisfied with the assignment, but that is life and I still have time to improve my performance.

Jeg håber i havde en dejlig påske. Jeg havde, men tiden efter påsken har virkelig være hektisk.

Jeg har i den foregående uge skrevet AT-synopsis, som jeg til sommer skal til eksamen i. Skal jeg være ærlig, så er jeg ikke tilfreds med opgaven, heldigvis har jeg stadig mulighed for at forbedre min præstation.

Filled CupCakes

I used my Valentine’s Day treating myself with these lovely Chocolate Cupcakes which where filled, not only with love, but also with Vanilla Cream Cheese, a fashion magazine and a cup of Chocolate, yummy 😛

Chocolate is one of the best way to enjoy life, but making cake including chocolate is just delicious.
I have actually wanted to make these cupcakes the whole week, because last weekend my sister call me and ask me if I had any idea to bake some really delicious cupcakes and my first thoughts was these.

If you want to treat yourself or someone else these days, you should try these out.

Cupcakes 

300 g Flour ( I use a whole grain flour)
280 g Sugar (I use Stevia for a sugarfree version)
100 g Greak Yoghurt
½ tsp. Baking Soda
1 tsp. Baking Powder
2 tbsp. Coca Powder
4 ml. Milk
1 tsp. Lemon Juice

evt. 50-80 g Chopped Chocolate or/and 50 g chooped nuts

Frosting
200 g Cream Cheese
100 g Greek Yoghurt
3-5 tbsp. Confectioner’s sugar (I used Stevia for sugarfree version)
2 tsp. Lemon Juice
1- 1½ tsp. Vanilia ekstract of vanilla beans.

CupCakes

In a bowl mix the water, milk and lemon juice. Let it stand on the kitchen table for two minutes.
in another bowl sieve the flour, coca powder, baking soda and powder.

Add the sugar and the greek yogurt to the wet ingredients.
Mix it well together so the sugar is dissolve.

Add the flour mixture to the wet ingredients and mix it well to it is smooth.
Fill each muffin liner 1/2-2/3 full and bake the cupcakes at 350 F (180 C) for 20-30 min.
Let the cupcakes cold down when they are done.

Cream Cheese Frosting
In a bowl whisk together the cream cheese, greek yogurt and the confectioners sugar.
Add the vanilla extract/vanilla bean and the lemon juice. Mix it well together.

When the cupcakes are cooled you can fill them with the frosting.

Make a hole in the top of the cupcake. A piping tip is perfect to the hole.collage1

Fill the hole with frosting. Place back the top in the hole. Top your cupcake with the frosting.

These Cupcakes are filled with love and with a little hidden surprise. Enjoy your cupcakes.


Cupcakes
3 dl Skummemælk
1 dl Vand
100 g skyr, gr
1 spsk Citronsaft el. edikke
1 tsk. Bagepulver
½ tsk. Natron
300 g Hvid Hvedemel
2 spsk.+ 1 tsk. ISIS SØD el. andet tilsvarende til 250-280 g sukker.
2 spsk. Bagekakao
Evt. 5o g Hakket Chokolade og 50 g hakket nødder. (Valgfrit)
Cream Cheese Frosting
200 g Flødeost
100 g Cheasy Skyr
1 tsk. vaniljepulver
1 tsk. citronsaft
3-5 spsk. Florsød
Cupcakes
I en skål tilsættes mælk, vand og citronsaft/edikke. Lad det står i et par minutter.
Si mel, kakao og natron sammen i en anden skål. Tilsæt også evt. hakket chokolade og nødder.
Tilsæt de våde ingredienser til tørreingredienser.
Tilsæt sødning og pisk det til en ensartet og luftig dej.
Fordel dejen i muffins forme og bag dem ved 180 C i ca. 20-30 min.
Lad muffine køle helt af, inden de fyldes med cream cheese frosting.
Frosting
Pisk flødeost og skyr sammen. Tilsæt sødning, vaniljepulver og citronsaft, og pisk det hele luftigt.
Når du skal fylde cupcakes er en tyl virkelig god til, at lave hullet i toppen. Ellers kan du forsigtig gøre det med en ske eller en kernehusfjerne mm.

Welcome 2016

Happy New Year !!
It is time to take a look back on 2015 and reflect on what the year has present. At some point I don’t want to say goodbuy to 2015 because I wish that I had attain more in 2015. However I started the blog in 2015 and the blog has spring up thanks to you, dear readers, so thank you for reading the blog and comment on the entry it means a lot. :*

I don’t know what 2016 will  entain but I will be prepared on anything. There are some moments in 2016 that I’m looking forward to. My birthday the 29 January, who doesn’t looking forward for theirs birthday and summer where I’m graduating High School.
What are you looking forward to in 2016 ? Do you have any plans?

Anyways I just hope you got well into the NEW year. I had a lovely with friends, family , great food, Champagne and marzipan ring cake. It is a tradition in Denmark to eat marzipan ring cake at 12 p.m, exact when it is a ‘New year’. I have for the last to year made my own marzipan ring cake instead of buying it and I’m proud of the result (it is not that easy to make). Furthermore it is a traditon in my family that we ‘Jump’ into the new year 🙂

Sunday Breakfast

There is no better way to start the Sunday but eating pancakes for breakfast. I remember in my childhood how pancakes were the best thing I know in the world and there was nothing better than my grandmother’s pancakes. When my grandmother pass away my dad got her recipe book which he loves to share and teach us children with.
My grandmother’s pancakes contain a very special ingredient, I thought it was so weird when I was a child, but in my grandmother’s pancake recipe is there used beer, does that not sounds weird? Anyways the beer has a special effect on how the pancakes become. The beer makes the pancakes a little bit crispy, but still soft and chewy as pancakes shall be. Furthermore the beer gives also some flavor to the pancakes. Maybe you know the trick with the beer, if you don’t here is a recipes of my grandmothers crispy pancakes:

For 4 people:

  • 250 g Flour
  • 3 Eggs
  • 1 tbs. Sugar
  • ½ tsp. Cardamom
  • A pint of salt
  • 1 tsp. Vanilla extract (Optical )
  • 4 dl. Milk
  • 1½ dl. Beer

Mix the eggs and the sugar light and fluffy in a bowl. Add the cardamom, salt, vanilla, flour and beer and mix it together. Add the milk and mix it together.
If you can wait and have time for it you can leave the batter in the fridge for a half hour. If you can’t then you can just bake the pancakes.

Bake the pancakes one by one on a very hot frying pan in some butter.
Enjoy the pancakes with syrup, jam, sugar, ice cream, Nutella or how you like.

Pancakes is always perfect, whether it is for brunch or as dinner. I remember how my sister and me once had pancakes and ice cream for dinner, yummy.


Der er ingen bedre måde at starte søndag på, end med pandekager til morgenmad. Jeg husker i min barndom, hvordan pandekager var det bedste jeg kender i verden, og der var intet bedre end min farmors pandekager. Da min farmor for mange år siden gik bort, fik min far hendes kogebog, som han elsker at dele og lære os, nu voksne, børn med.

Min farmors pandekager indeholder en meget speciel ingrediens. Jeg synes virkelig det var underligt, da jeg var barn, synes jeg det var så underligt, men i min farmors pandekage opskrifter er der brugt øl, lyder det ikke underligt? Men øllet har en særlig effekt på, hvordan pandekager blevet. Øllet gør pandekager en lille smule sprøde, men stadig bløde, som pandekager skal være. Desuden giver øllet giver også en vis smag til pandekager. Måske du kender tricket med øl, hvis du ikke gør, så er der her er en opskrifte:

Til 4 personer:

  • 250 g mel
  • 3 æg
  • 1 spsk. Sukker
  • ½ tsk. Kardemomme
  • Et nip af salt
  • ½ tsk. Vanille ekstrakt el. 1 tsk. vaniljesukker (Valgfrit)
  • 4 dl. Mælk
  • 1½ dl. Øl

Bland æg og sukker sammen i en skål, til en luftig og let æggesnaps. Tilsæt kardemomme, salt, vanilje, mel og øl og blande det sammen. Tilsæt herefter mælk og pisk til en dej uden klumper.

Hvis du kan vente og har tid til det, kan du lade dejen i køleskabet i en halv time. Hvis ikke så bare bag dem NU.

Bag pandekager én efter én på en meget varm pande i lidt smør.
Nyd pandekager med sirup, marmelade, sukker, is, Nutella, eller hvordan du kan lide.

Pandekager er altid perfekt, om det er til brunch eller som aftensmad. Jeg husker hvordan min søster og mig havde engang pandekager og is til middag, mums.

The Best – Chocolate Chip Cookies

The autumn afternoon gives some perfect opportunity to do one of the things I love most; cooking. These Chocolate double chip cookies are a classic cookie and perfect to the afternoon tea, coffee or chocolate. These cookies are simple, delicious and so easy to make, that there is no excuses to no making them.

For 24 cookies

  • 500 g All-purpose flour
  • 350 g Brown Sugar
  • 1½ tsp Baking Soda
  • 1½ tsp. Baking powder
  • 1 tsp. Salt
  • 2 tsp Vanilla extract
  • 300 g Butter at roomtemper
  • 2 eggs
  • 225 g Dark Chocolate chips or chopped dark chocolate
  • 225 g White Chocolate chips or chopped white chocolate

In a bowl mix, flour, baking soda and powder together, set aside.
In another bowl mix the butter and sugar well together, so it is light and fluffy. Then add one of the eggs at the time.
Add the vanilla extract and mix.
Add the flour mix a little at the time until the dough is gathered and smooth.
Fold in the chocolate chip/chopped chocolate with a spoon.

With your hands make 24 balls of the dough and place it on a baking sheet. DON’T push them flat. Bake the cookies in a preheated oven for 15-20 minutes or to they are golden.

You can replace 225g of the chocolate with chopped hazelnuts, dried cranberries or what you like.


Efteråret giver mulighed for, at jeg kan gøre en af de ting jeg elsker, bagning. Disse Chokolade Chip Cookies er en klassisk småkage, og er perfekte til eftermiddagskaffen, tea eller varm chokolade. De er simple, lækre og så lette at lave, så der er ingen undskyldninger.

For 24 småkager

  • 500 g Mel
  • 350 g Brun Farin
  • 1½ tsk. Bagepulver
  • 1½ tsk. Natron
  • 1 tsk. Salt
  • 2 tsk. vaniljepulver /ekstrakt el. Korn fra ½ vaniljestang.
  • 300 g Blødt Smør
  • 2 æg
  • 225 g Mørke Chokolade Knapper eller hakket mørk chokolade
  • 225 g Hvide Chokolade knapper eller hakket hvid chokolade.

Bland mel, bagepulver, natron og salt i en skål. Sæt skålen til side.
Bland smør og sukker sammen med en elpisker, så det er luftigt og lyst.
Et af gangen tilsættes æggene, og herefter vaniljen.
Langsomt tilsættes lidt af melet af gangen, indtil dejen har samlede sig og er ensartet.
Vend chokoladestykkerne i dejen med en spatel eller ske.
Form med hænderne 24 små kugler og placere dem på en bageplade. TRYK ikke småkagerne flade, da de flyder ud.

Bag småkagerne i en forvarmet ovn i 15-20 min el. indtil de er gyldne.
Du kan evt. bytte 225 g af chokoladen ud med hakket hasselnødder, tørret tranebær eller andet.

Chinese Mid autumn festival – Månefestival

Okay, jeg er sent på den, i forhold til dette indlæg.

Den. 27 september var det månefestival, så jeg er 13 dage forsent på den. Månefestivalen er en kinesisk tradition, hvor man fejrer 3 ting. Man fejrer forsamling (Gathering) af venner og familie, taksigelse (thanksgiving) for høsten og gode bekendte og beder (Praying) for en god fremtid, børn osv.

Det der kendetegner månefestivalen er selvfølgelig månekagen, som er en meget speciel kage (taler af erfaring.), som kun spises under månefestivalen.
Månekagen består af en tynd dej ala. butterdej, inden i kagen er der lotus frø pure, og en æggeblomme.
Månekagen er en lidt tung kage, men sød og interessant. Jeg kan dog godt undvære æggeblommen. Der findes mange forskellige variationer af månekagen, nogle er med ‘red bean’ fyld som er en speciel bønnefyld.


27th September was Mid autumn festival, so I’m like 13 days late out. Mid autumn festival or moonfestival is a Chinese tradition where you celebrate three concepts;
1. Gathering, such as family and friends.
2 .Thanksgiving, for the harvest or for harmonious unions.
3. Praying, such as for babies, longevity, or for a good future

The special thing about Mid autumn festival is that you eat mooncakes, which is a great but really special cake.
The mooncake is made of a thin pastry like puff pastry, inside the mooncake is there lotus seed paste and in the middle an egg yolk. A mooncake is a bit heavy, but nice and delicious cake. I find the mooncake really interesting, but I didn’t mind if there wasn’t an egg yolk. The mooncake exist in a lot of different variation, some with red bean paste, which is a paste made of some special beans.
It is possible to make the mooncake and I think that I want to try some time. If you didn’t notice, you will now. I’m obsessed with food and love If I can make it by myself and healthy.

Selvom det kun er et par dage siden jeg forlod HK, savner jeg det allerede ubeskrivelig meget. Heldigvis har jeg disse billeder, til at holde liv i minderne og bringe mig tilbage til Hong Kong.

  1. Drak vanilla cream & strawberry cheesecake frappuccino på Starbucks med søs, hvor jeg fandt de fineste starbucks Hong Kong bamser. 
    – Drank Vanilla Cream & strawberry cheesecake frappuccino on starbucks with sis, where I found cute Starbucks Hong Kong Teddy bears. 
  2. Spiste lækre blåbær i store mængder (Blue Ducklings, Love Blueberry)
    – Ate a lot of Blueberries (Blue Ducklings, Love Blueberry)
  3. Spiste Sushi (Igen, igen). Prøvede nye variationer og fandt nye favoritter.
    – Ate Sushi (Again, again). Tried some new variations and got some new favorits 
  4. Bestilte Skumfidus kaniner på restaurant, hvor efter vi ikke nænnede, at spise dem (søde og skræmmende på engang). 
    – Ordered marshmallow rabbits on a restaurant and then vi didn’t have the heart to eat them (so cute and scary at the same time). 
  5. Spiste Cream Puff sammen med den sødeste søs (Love to cream puff)
    – Ate Cream Puff together with the best big sister (Love to cream Puff) 
  6. Fandt Kæmpe Minions i et shoppings center
    – Found giant Minions in a shopping center. 
  7. Spiste Mr. Fields Cookies sammen med Søs i Mong Kok.
    – Ate Mr. Fields Cookies with my sister in Mong Kok.

Let’s drink coffee

IMG_1230 IMG_1231 IMG_1237 IMG_1234IMG_1238I sidste uge mødtes vi med et par venner hernede, hvilket gav anledning til cafe besøg på “Pokka cafe” i Tai Koo. 

Jeg bestilte et stykke “blueberry cheesecake” (elsker, elsker blåbær), imens bestilte min søster og hendes kæreste en “chocolate sundae”. Noget af en “stor” (den var grande) fristelse de fik bestilt og prøve sådan en næste gang. 😘

Last Week we were seeing some friends which gave a opportunity to give “Pokka cafe” in Tai Koo a visit. 

I ordered the “blueberry cheesecake (I love, love blueberries). My sister and her’s boyfriend ordered a “chocolate sundae. What a big (they were giant) temptation they ordered. I must try one of them next time I visit “Pokka cafe”.
